Pancake cake

Yesterday I made one of my savory pancake cakes again! All you need is a lot of pancakes and different fillings for every layer. And some “adhesive” ingredient to put in between, like creme fraiche, cream cheese or mayonnaise.
For the layers I use things like roasted eggplant, roasted and peeled red bell peppers, butter fried mushrooms, boiled and grated carrots and beetroots, spicy parsnips, lightly fried chopped onions and other things I have around. This cake is a success every time I make it!

    I like colored pancakes with notella as a breakfast, but this looks a nice idea for dinner!
