Lemon curd pie with meringue

My lemon curd pie with meringue

Yesterday I made a lemon curd pie with meringue, and it disappeared before I could take a proper picture! You can make one too, it’s easy.

What you’ll need:

4 eggs (yolks and whites separated)
200 grams of butter
2,5 dl of sugar
3 dl wheat flour
5 table spoons of corn flour
Juice and zest from 3 lemons
3 dl of water

Set your oven to 200 degrees.

Make the dough out of half the butter, half a deciliter of sugar, one egg yolk and the wheat flower. Put it into a pie plate and place in the oven for about 15 minutes, then let it cool. While that’s in the oven, make the lemon curd. In a pot, mix the lemon juice, water, corn flower and the remaining sugar. Bring the mixture to a boil, while stirring. Add the lemon zest, three egg yolks and the rest of the butter, and mix. Pour the mixture into the pie plate. Now whip the egg whites until you have a nice smooth meringue and spread it over the lemon curd. Place it in the oven for about 15 minutes. Done!
