It’s super simple, and requires no baking! It takes a while though, since it has to sit in the freezer a few hours. Here’s the recipe:
For the crust:
200 grams of digestive crackers
3 tablespoons of brown sugar
100 grams of butter, melted
For the filling:
2 dl of double cream, whipped
One pack of cream cheese (about 200 gram)
4 tablespoons of sugar
1 tablespoon of gelatin
3 tablespoons of milk
Blueberry marmalade and blueberries
Mash the digestive crackers into crumbs. Mix with sugar and the melted butter. Press mix into a pan and chill in freezer at least 2 hours.
Beat the cream cheese, add the sugar.
Soak the gelatin in the milk, then melt it. Pour into the cream cheese while beating.
Fold in the whipped cream
Now spread the mixture over the crust
Cover with the blueberry marmalade and put a few blueberries on top
Let rest in the freezer about 2 hours
